Eleven Mashbills in Fourteen Days

Something truly incredible is happening here. 

Over two weeks, Whiskey House is not only demonstrating the strength, flexibility, consistency of quality, and technological superiority of this state-of-the-art facility, but it’s also showing how it’s transforming the contract whiskey market.

Between May 23rd and June 5th, we will mash, cook, ferment, and distill 11 different mashbills, including three high-rye bourbons, three wheated bourbons, one four-grain bourbon, one non-GMO bourbon, two rye whiskies, and an American single malt.

While this sounds complicated, it gets even more challenging. These mashbills are produced according to different recipes, comprising varying grain profiles, cook times, yeast strains, enzymes, and lengths of fermentation.

Once distilled, production continues to get more multifaceted. Our customers selected 13 different types of barrels from three different cooperages: two different char levels, some with varying levels of toasting, 6, 12, 18, and 24-month air dried staves, and multiple entry proofs.

Finally, of the several thousand barrels produced, one tankerload is being sent for domestic use, other barrels will be stored in our rickhouses or transferred to our customers’ warehouses. We even have one customer receiving four, 55-gallon drums and another customer receiving a tankerload in Japan.

Whiskey House was built for this.

Thanks to our design, sequence of operations, automation, fully closed-loop system, and AI backed technology, Whiskey House can achieve the quality of production from a massive system, while having the flexibility to cycle through multiple mash bills (as many as fourteen at a time). We can produce single custom runs between 80-100 barrels and still achieve the highest-quality distillate.
